Pancake Day (Shrove Tuesday)
Pancakes are associated with the day preceding Lent because they were a way to use up rich foods such as eggs, milk, and sugar, before the fasting season of the 40 days of Lent.
How to make the perfect pancakes
Ingredients:
200g/7oz plain flour
350-400ml/12-14fl oz milk, or half a pint of milk, half a pint of water for a lighter pancake
Two large eggs, lightly whisked
One tablespoon of vegetable oil
Pinch of salt
Vegetable oil for frying or butter
Method:
Place the flour into a large bowl, make a well in the centre and pour in the milk and eggs.
Whisk together before adding the flour. Continue to whisk until you have a smooth batter.
Then add one tablespoon of vegetable oil and whisk thoroughly.
Take a large frying pan and add the oil or butter. Heat the pan over a medium heat for roughly a minute.
Add the batter to the pan and immediately start swirling it round the pan to get a nice even layer.
Cook the pancake for approximately half a minute.
